Could this be used as a WiFi Access point. Say I want better WiFi coverage at a particular spot in my garden 1500 ft. away. Or must you use to of them to create a bridge?

No. You need to set this up to bring Wifi to the garden and then you'll need an AP there distribution of the Wifi. You will need 120v of power too. And... safe place for the AP to not get wet.  I have this setup between two buildings and it's fantastic but I have AP Wifi devices from Unifi and both locations.

What is the max distance, with clear line of sight, this system would work?

In my system i have a 12km shot that's avg -65 with a avg delt of 2-4 .
If your shot is clear and high enough ,the further your shot is the higher it should be , for a better signal. It should be able to reach around 25km.

how hard are these to align? I wan't to use this for a portable setup that will be stationary when in use and am hoping I won't have to fiddle to much to make it work. The distance will be 1 km or less, probably less than 500 meters.
